It's easy being green when model Lonneke Engel is at your table. Modelinia spent a day with Lonneke and got the skinny on healthy eating and living.

Lonneke Engle's first job was with famed photographer Bruce Weber. The pair still work together to this day.

A certified health counselor, Lonneke believes good food is the basis for a good life.

In a pinch, Lonneke cabs it around the city but prefers to walk or bike ride when she can.

Fresh, organic, and local foods give Lonneke a constant glow.

Coconut water is one of Lonneke's favorite drinks. She's even trying to get her favorite brand, Zico, imported to Holland.

Even at lunch she's working. Her BlackBerry is always nearby.

As a health counselor, Lonneke helps her model friends make better food choices.

Lonneke prefers a diet full of vegetables, rice, and bran, and eats just until she is full.

Breakfast is the most important meal of the day for Lonneke. Here she has her favorite: organic oatmeal and fruit.

Fresh blended juice of aloe, carrots, and spinach replaces coffee for Lonneke in the morning.

Beets are a great source of vitamins, and Lonneke has them as often as possible—even blended with fresh pear for a refreshing drink.

Spicy Thai wraps and vegetarian lasagna are two of Lonneke's favorite dishes at raw food restaurant Pure Food and Wine.

Lonneke stays fit by running and taking Urban Rebounder classes at her gym. And a diet rich in organic greens helps, too.

During breakfast at Liquiteria, Lonneke was greeted by fans from her native Holland. She stopped to chat in Dutch and posed for photos with them.
